Anchovy & Cherry Tomato Salad

This anchovy and tomato salad recipe has very few ingredients but absolutely sings with flavor when it’s made with cherry tomatoes picked at their ripest. For the prettiest salad, use a combination of orange, yellow and red tomatoes.

  1. Put Whisk chives, anchovies, oil, vinegar, mustard, pepper and salt in a large bowl until well combined.

  2. Gently stir in tomatoes.
Fresh chives ½ cup
Anchovy fillets 6
Olive oil 2 tablespoons
Sherry vinegar 2 tablespoons
Whole-grain mustard 1 teaspoon
Black Pepper ½ teaspoon
Salt ¼ teaspoon
Cherry tomatoes 2 pints
